Despite the success of attempts to expand the productivity of the global food production system to accommodate dietary changes resulting from population growth and wealth accumulation, the issues of hunger and malnutrition remain unresolved challenges. Another dilemma regarding current global food and nutrition issues is the fact that malnutrition, overeating, hunger, and obesity occur simultaneously within the same country or even within the same city. Furthermore, a significant amount of food is wasted during the consumption process. Adequate production, the simultaneous prevention of hunger and obesity, and the ever-increasing amount of food waste constitute a dilemma facing humanity that we must solve. Having long been interested in food issues, the author wrote this book believing that consumer movements and rational consumption can serve as solutions to the food production needs of the growing population. To this end, the text is organized into sections covering the First Green Revolution, the Production Revolution, the Second Green Revolution, the Genetic Revolution, the Third Green Revolution, and the Consumer Revolution. It covers in detail everything from the etymology of the Green Revolution to crop breeding, crop improvement through genes and genetic recombination, and the debate surrounding genetically modified crops, as well as future population and food issues, food security, and global warming. Having passed through the production revolution and the genetic revolution, we must now address the impending food crisis through the consumer revolution.
