Healthy plant-based dieting is great.
This book broke my fixed assumption that vegetarian meals are unbalanced. Plant-based ingredients are enough for a balanced diet, and the book is a great help in putting one together easily. I liked that it wasn't difficult.
The recipes are organized by breakfast, lunch, dinner, dessert, special meals, and snacks to go with drinks. By building recipes around nutritional content, the book shows that a plant-based diet can provide sufficient nutrition. The recipes use a variety of vegetables, so they are good to cook as written or adapt. Above all, I liked the concise, thoughtful instructions. At the end, there is a four-week vegetarian meal plan, which is useful when planning a week's meals! I'll work my way through

Jeonggome: My Vegetarian Table
This is the age of veganism. Many people choose plant-based eating over meat for a variety of reasons: harmful effects on health, the environmental damage caused by meat production, and animal rights, which have become as important as human rights. The reasons to start eating plant-based are countless. But even without such weighty concerns, a simple desire to lighten a table full of stimulating, high-calorie foods and cook meals with one's health in mind is enough to get started. My Vegetarian Table is the first recipe book by Jeong Gourmet, a rising influencer in vegetarian cooking. The author began eating plant-based to recover her health, which had suffered after years of office work. Starting in January 2022, she began actively sharing vegetarian recipes and information on her blog, Twitter, and YouTube. In just two years, she gained about 90,000 Twitter followers and more than 8,000 blog subscribers. Her recipes are popular, earning thousands of retweets whenever she posts them on Twitter. That is thanks to her distinctive recipes, which promise flavor as well as health. She also refers to Korea's Ministry of Food and Drug Safety to provide an accurate nutritional analysis for every dish and notes the benefits of each ingredient. In doing so, she challenges the misconception that plant-based eating is nutritionally unbalanced and has opened a new chapter in vegan cuisine.
